Poaching Liquid
Ingredients
1 cups white wine
juice of 2 limes
3 sprigs cilantro
½ tablespoon garlic minced
½ tablespoon ginger minced
1 cup vegetable stock
salt and pepper
Preparation
Combine all the ingredients in a bowl. Poach fish according to recipe.

Gazpacho Sauce
Ingredients
1 cup small diced cucumbers
½ cup small diced red onion
1 cup small diced tomatoes (no seeds)
½ cup red and green bell peppers small diced
3 thai chilies deseeded and finely diced
2 teaspoons minced garlic
1 tablespoon finely chopped cilantro
½ tablespoon white miso
1 tablespoon sushi vinegar
2 teaspoon yuzu juice
1 teaspoon fresh lime juice
1 tablespoon tamari
1 tablespoon grapeseed oil
pinch of togorashi
Preparation
Combine all the diced and chopped ingredients in a bowl. Mix well. In a blender combine the
miso, vinegar, yuzu, lime juice, and tamari. Begin blending. Drizzle in the grapeseed oil. Finish the dressing with a pinch of togorashi. Mix the dressing into the bowl of chopped ingredients. |
