Ingredients:

6 oz. Filet Mignon
Coarsely cracked peppercorns
Olive Oil
Potato - sliced
Garlic - chopped
Red Onion - chopped
Sliced Mushrooms
Carrot - sliced
Whole Tomato - chopped
Dash of Brandy or Cognac

Directions:

Pat the steak with cracked peppercorn. Heat olive oil in a pan.
Sear steak for 3 minutes on each side. Add salt and pepper.
Add sliced potato, and stir. Add carrot, onion, and pinch of garlic, and stir.
Add a little salt and pepper, mushrooms, and stir. Add fresh chopped tomato.

Pull pan off of flame, add Brandy or Cognac (2 circles around pan) in swirling motion.
Take back to the stove, step back, and flame the Brandy. Wait till alcohol burns off.
Transfer to a roasting pan. Arrange ragu (stew) around filet mignon. Cover with foil.
Cook 10 minutes in a 350 degree oven (for medium rare). Remove foil, plate and serve.
