Ingredients:
8-10 oz Cod or Scrod Filets
1 cup Flour
2TBS Olive oil
1 Onion (Sliced)
2 Potatoes
2 TBS Capers
Parsley
Pinch Red Pepper Flakes (optional)
Pinch of Salt (Sea Salt optional)
One 15 oz. Can of Chopped Tomatoes
Directions:
Cut cod filets into inch wide size pieces. Lightly flour cod and then sautee
fish in some olive oil for some color. Add sautéed onions and potatoes (cut in round slices) to the bottom of a ceramic dish. Place sautéed fish on top of onions and potatoes. Add handful Capers, pinch of parsley, pinch of red peppers and a pinch of sea salt. Diced, pitted olives and red chopped tomatoes (can be fresh or can peeled). Dash of Olive oil on top of ingredients. Place ceramic dish in oven of 400 degrees for a half and hour. Plate and garnish with parsley-this is a great quick after work dish! |
