Cranberry Glazed Stuffed Chicken
Glaze:
1 cup of Cranberry preserves
2 TBS of Dijon Mustand
Roasted Garlic (Roasted garlic in olive oil in oven for one hour)
*MIX ALL INGREDIENTS TOGETHER
Filling:
One cup of wild rice mixture (Brown Jasmine Rice and Wild rice)
1 TBS Fresh Parsley
One orange zested
½ cup chopped Pecans
One Cup of Cranberries
*MIX ALL INGREDIENTS TOGETHER
Additional ingredient:
Two Boneless and Skinless Chicken Breasts
Directions:
Two Boneless skinless chicken breast-pound out gently to flatten out. Put
filling in center of chicken breast and roll them up and place seam side down. Glaze chicken generously. Place in 350 degree oven for 35 minutes to cook. Plate as a whole breast or slice (must chill chicken first before slicing-great for family style!) |
