Ingredients:

Olive Oil (As Needed)
1 Large Yellow Onion
4 Cloves Chopped Garlic
1 Green Bell Pepper, 1 Red Bell Pepper - Chopped
1 Can Sliced Stewed Tomatoes
1 Tablespoon Cumin
2 Tablespoons Chili Powder
1 Tablespoon Oregano
1 Teaspoon Black Pepper
1 Teaspoon Salt
1 Small Can (15 oz.) Red Kidney Beans - Drained
1 Small Can ( 15 oz.) Chick Peas - Drained
6 Artichoke Hearts - Quartered
2-3 Dashes of Tabasco or Your Favorite Hot Sauce


Directions:

In large 4 quart sauce pan, heat olive oil. Add onion, garlic, and peppers.
Sweat until translucent - but not soft. Add spices and tomatoes and bring to a low boil.
Add mushrooms, beans, chick peas, and artichokes. Reduce heat and simmer for
20-30 minutes. Add salt and pepper to taste. Add a dash of your favorite hot sauce!

Serve in a soup bowl, with toasted garlic bread . . . ENJOY!
